Blueberry Oat Breakfast Muffins

 
Slimming World Blueberry Muffins
 

As I write this my house smells like heaven. I've just made this batch of blueberry oat muffins, to curb the recent morning pastry cravings that have been coming my way! Perfect to pop in a lunchbox when on the move in the morning. These are fairly simple to make and very low in syns (3.5 each, or have three for for your healthy B and add 7.5 syns). The syns come from the small bit of flour, cooked blueberries, butter, sugar, and a splash of orange juice. Considering that standard shop-bought blueberry muffins are between 20-27 syns each, these are a brilliant alternative!

Ingredients

  • 70g Porridge Oats (12 syns or 2x HeB)
  • 100g Self Raising Flour (16 syns)
  • 1 egg
  • 1 muller light (vanilla)
  • 1 teaspoon of vanilla essence
  • 100ml freshly squeezed orange juice (2 syns)
  • 100g Bluberries (2 syns when cooked)
  • 2 tbsp butter (2 syns)

Directions

  1. Preheat the over to 180 Degrees
  2. Melt the butter in a saucepan
  3. In a bowl, mix the egg, vanilla essence, muller light and butter until combined
  4. Add the flour, porridge oats and orange juice
  5. Drop in about three-quarters of the blueberries and gently mix in
  6. Spray a cupcake tray with frylight and gently add the mixture using a spoon
  7. Pop the rest of the blueberries onto the top of the muffins
  8. Cook for 20-25 minutes or until risen and firm to the touch.

Porridge oat biscuits (healthy B)

 

I don't know about you lot, but I love anything "Oaty". You're talkin' flapjacks, hobnobs, porridge, muesli - get in my tummy! Furthermore, oats - when not doused in sugar and butter - are actually incredibly good for us. They are known as one of the best "complex carbohydrates" - meaning it takes longer for the body to release the sugar contained in them. This is great news for us, as we are less prone to sugar cravings this way and you will feel fuller for longer!

They are also cheap as chips. My favourite brand is the one you can get in Aldi - "Kavanaghs Organic Porridge Oats" - €1.69 for a KILO of the stuff. A kilo! Enough to sort you out for breakfast for a month!


With slimming world, you can have 35g of porridge oats as your "Healthy B". When you need a change from the usual bowl of porridge, tuck into the below recipe for slimming world porridge oat biscuits. The recipe amounts make two lots of your Healthy B.

Ingredients

  • Frylight
  • 70g porridge oats (unsweetened)
  • 2 eggs
  • 50g powdered sweetener (or sweet freedom syrup as a alternative, 6 teaspoons for 3 syns)
  • 2 drops of vanilla essence
  • Optional: 1 teaspoon of powdered ginger or cinnamon for a kick!

Directions

  1. Add all of the ingredients into a bowl and mix well.
  2. Spray a baking tray with frylight
  3. Divide the mixture into 12 or so onto the tray, allowing enough space to expand a little
  4. Bake at 15 mins at 180 Degrees, turning after 10 minutes
  5. Allow to cool and enjoy!
