Indian is my favourite cuisine, and onion bhajis are quite the drool-fest aren't they? So when I sampled a syn free onion bhaji at class recently I was blown away. I decided that these were going to accompany my slimming world curries every time... Now, these take a bit of prep so I've somewhat given up on that dream, but they are definitely worth rustling up as a party food or when having a "fakeaway" night in.

Ingredients
- Frylight
- 2 large onions, sliced
- 2 eggs, beaten
- 1 sweet potato, sliced
- 1 tablespoon of curry powder
- 1 tbsp turmeric
- 1 tsp chilli flakes
- Salt and pepper
Directions
- Slice the onions
- Grate the sweet potato
- Beat the eggs
- In a bowl, mix the ingredients with the spices, salt and pepper
- Spray a cake tray with frylight
- Using your hands, mould the mix into balls and add to the cake tray
- Bake for 20 minutes until golden brown, allow to cool and serve
