Onion Bhajis - Syn Free

 

Indian is my favourite cuisine, and onion bhajis are quite the drool-fest aren't they? So when I sampled a syn free onion bhaji at class recently I was blown away. I decided that these were going to accompany my slimming world curries every time... Now, these take a bit of prep so I've somewhat given up on that dream, but they are definitely worth rustling up as a party food or when having a "fakeaway" night in.

Ingredients

  • Frylight
  • 2 large onions, sliced
  • 2 eggs, beaten
  • 1 sweet potato, sliced
  • 1 tablespoon of curry powder
  • 1 tbsp turmeric
  • 1 tsp chilli flakes
  • Salt and pepper

Directions

  1. Slice the onions
  2. Grate the sweet potato
  3. Beat the eggs
  4. In a bowl, mix the ingredients with the spices, salt and pepper
  5. Spray a cake tray with frylight
  6. Using your hands, mould the mix into balls and add to the cake tray
  7. Bake for 20 minutes until golden brown, allow to cool and serve

 

Weetabix Muffins (with choc shot!)

I came across this recipe on a forum and thought it was an excellent idea! A great way to liven up the ol' healthy B! I would definitely put a couple of these away with a cup of tea, either at breakfast or as a snack in the afternoon. You can count 4 as a healthy B but add a syn for each (cocoa and choc shot!)

 

Recipe makes 8 muffins

4 weetabix

4 eggs

2 drops of almond essence

1/2 tub of Muller light

1 teaspoon of cocoa

2 heaped teaspoons of sweetener

For the topping: 

1/2 teaspoon of Sweet Freedom Hot Choc Shot Per muffin

Sliced Bananas

Directions:

  • Crush or Blend weetabix into fine crumbs
  • Add the eggs, sweetener, cocoa, Muller light and almond essence to the weetabix and blend until smooth
  • Divide the mixture into a cake tray
  • Bake at 180 degrees for 20-25 mins.  
  • Allow to cool
  • Top each muffin with 1/2 teaspoon of choc shot and a slice of banana. 

This is really quite easy to put together and they are really filling too. I quite enjoyed getting back in the baking game too! You may just see more ideas coming your way soon!
